just noticed today my rear shock (OME, regular length) will make a pffffff sound, like blowing air, when i go over a speed bump at like 5mph. heard this on other cars/trucks. What the heck is it?

Just the shock oil being pushed through the shocks valving mechinism at a fast rate.At that speed you sometimes can hear it but won't at faster speeds.
