So i just got done installing my new hitch receiver, but there's one bolt that was giving me lots of trouble. Of the 6 used, the rear most passenger side bolt would not go back in all the way. Got out about 1/4 of an inch away from being in and rounded off the head :(
So how well will the other 5 hold if I were to tow, I'm guessing don't your anything with too heavy of a tongue weight until I get it fixed. Our should it still hold up fairly well?

If it was me, I'd take the bolt to a hardware store and match it up to a new one.

Then I'd clean the threads out if necessary with a tap and put the new bolt in. You really do want to get all the bolts into the hitch.

I have the extra hitch bolts I need, just have to get that one out first.

I wouldn't tow unless I had all 6 in place.

Don’t risk it!!! Get a vise and lock it down on the bolt and try backing it out. If you don’t have the room to move it, try a vise grip. Try every option you can think of to get it out. If that doesn’t work, cut it, drill the rest out and then you’ll need to re-tap it. Make sure the new bolt is grade 8 or better. If you’re not confident you can do it all yourself bring it to a shop, that’s not an area you want to mess around with. Absolute case situation you are towing a trailer and the road is under construction with “Grooved Pavement” for a number of miles, the other screws come loose and you cause a pile up and a dog dies. Dogs don’t get air bags. Think about the dogs man.
