I'm going to be installing a light bar soon and was wanting to make the switch one of the unused switches that is normally for heated seats since I don't have those. Has anyone done this, if so would you mind kind of guiding me through how to do it.

I don't think it's possible. Last I knew the whole part is a circuit board whether or not you have the buttons there.

I have seen that center console bank of switches, moved to the drivers knee panel... Then a custom set of switches put in its place.

Only way I could see you using the existing, would be to de-solder the switch (heated seat switch in this case) completely from the board and use it as a dedicated switch for only the light bar circuit.

I'd rather have a choice about what kind and where they get put, than go through all the that trouble?!
