So it sounds like we are doing evening meal on Thursday, April 26th in Moab. By my count we've got about 75 signed up at this time.

I was planning the following items for the smoker that night:

Pork Shoulder - sliced bbq pork (on bun?)

Turkey Breast - sliced bbq turkey (on bun?)

Spare Ribs (1-2 ribs/person with the above)

I'd rather not do brisket, because it just doesn't turn out like I like, if West is doing a BBQ the previous day, that will likely be steaks on a grill, and we already have Turkey for anyone needing Kosher. I have identified a butcher shop in Moab, so we won't have to worry about keeping meat for a week.

I will be bringing the smoker, charcoal, wood (apple & hickory), rubs, tin foil, etc. and taking Thursday off to do the smoking.

Any thoughts about the rest of the meal?

I am thinking something easy like dinner rolls, macaroni and potato salad, and maybe something like cookies for desert. All stuff we can pick up preprepared in town.
