You might want to consider doing a coil lift and getting some heavy duty coils for the rear, maybe some OME HD. Talk to All J's and he can work something out. That way you don't have a sag in a few years if you tow alot.
For the front going with a spacer or full replacement strut dosen't matter that much. But not all spacers are created equal and I would suggest you look into the Rocky Road Combo kit over the Rusty Spacer/RRO OTT kit.
I lost about 2mpg once I added my tires, then 2 with the armor and 2 for this and that.... it depends on what kindof tires you get. I got more street a/t tires vs mtr or agressive a/t. That's because it's my daily driver too. (100 miles each down right now

Once i put in my Rusty the quality of the ride improved.
