If you don't have the head milled, which you should not do unless it is warped, go back with the same one hole gasket that came off. The head gaskets are steel shim type gaskets and can be reused if it is not damaged or compromised in any way.
There are clearance, performance, and engineering designed reasons and considerations as to why the factory installed different thickness head gaskets as fully covered and outlined in the Factory Service Manual. It is not a "one size fits all" design even though you can get away with installing a thicker gasket, it would lower the compression ratio slightly.
