There's no reason to put an air/fuel gauge in a diesel unless you jus want something to look at, like a boost gauge.
The intake manifold is easily reached by removing the boost hose from the intercooler to the manifold. Put some cloth or paper towel into the intake and drill/tap into it. The small metal fragments will be caught in the cloth/paper towel and not damage the valves.
EGT can be post or pre turbo, you decide if you want the risk or to add 75F if you don't want the risk. warp2diesel has done some comparisons so shoot him a PM so you get the good reading without the risk
