Any/all of them. The belt-driven accessories add a load on the engine (or more than anything, just additional rotating mass), causing engine speed to respond slower to fuel being added/removed. Without the belt, engine RPM can increase/decrease more quickly causing the PCM to have a hard time holding a constant RPM. Basically the belt-driven accessories act like a flywheel.

You're ok there; the water pump is driven by the timing belt on this engine so it's still circulating coolant without the serpentine/accessory belt.
