I’m not new to diesels, but I’m new to these CRD’s. How much smoke is normal from these? I noticed visible smoke in the mirror when I stepped in it but it doesn’t when just sitting there. I can’t see anything during normal driving.

A little puff of smoke is normal on hard acceleration, especially if your EGR is still enabled. Many of the GDE tunes and probably even the free tunes will help eliminate some smoke as well. Make sure you have a good clean air filter also, as choking the engine will cause less intake air and subsequently more smoke.

MAF sensor is unplugged and the crossover EGR tube is removed and blocked. It’s not excessive, but I could seem light smoke as I was in passing gear going up a mountain for a quarter mile. As soon as it shifted I couldn’t see any more.

That's pretty normal. The only other thing worth mentioning is to make sure the fuel filter isn't clogged. Most people change them every 2-3 oil changes, maybe a little longer with good fuel, to keep the CRD running smooth.

smoke is normal, especially if you live at altitude. The ecu will reduce boost as you get up higher in elevation which makes it run a bit richer. Even when I live in MA I would get some smoke with the GDE hot tune under high throttle.
