I have a 1267 code .
what is the best way to know what kind of glow plug voltage I have on the Jeep

Not sure how to tell if the stock 7v programming has been changed to 5 v, but you could pull plug #1 and see what voltage plugs are in there.
People have been running 5v plugs on 7v stock programming without issue for a while now.

Yup.
Just replace all 4 of them with 5 volt steel tipped plugs.
IDparts should have them in stock.

If I have that relay looking glow plug controller does it mean I got the 5v ???

5v / 7v function is determined by ECM programming.

"Controller" is simply a solid-state solenoid switch.

I've sent a e-mail to GDE but no answer , maybe on holliday ?

So removing the glow plug is the only way to figure out the voltage of the system ?

That’s the only way.
Unless you can dig up some repair history or find a sticker somewhere that says “5v glow plugs.”

The sticker on my timing cover still says “7v glow plugs” but I know it has 5v plugs because I installed them.

Removing the glow plug will tell you the voltage model of the glow plug.
One can assume the programming is the same, but that may not necessarily be correct.
When I bought mine, for example, the programming is original 7v, but #4 glow plug was 5v Bosch.
