The low pressure switch is on the AC accumulator, that should still be a switch and not transducer, so open/closed.

this also means you should be able to jumper it to test if that is the issue, the AC system should not run with low pressure switch open.

I bought a Liberty CRD, drove it across the country and let it sit for three years before getting it California registration. So I got it running in May 2019. Then the AC in my 2006 Liberty CRD with 218xxx miles was not cooling at all and the compressor would shut off. So I asked the refrigeration tech to pull all the refrigerant out of the AC system and use the vacuum pump to get any water out and refill the refrigerant. After the refill the AC still would not work. The compressor would shut off after running for 15 seconds. The tech mentioned that replacing the accumulator is an action to take short of replacing the compressor. If I needed to replace the compressor I was going to replace the compressor and I would already have a new accumulator. So I had the accumulator replaced and the tech found that it was it was one fourth to one third full of oil. The accumulator was not supposed to have any oil in it. Also the tech had a book about Chrysler refrigeration specifications for Jeeps and the decal under the hood of the Liberty that gave the amount of refrigerant to use was about 4 ounces low. So the tech added the extra refrigerant and now in the heat of summer the air out of the vent is 60 degrees F when the outside temp is 95 degrees F.

I am not great at ac stuff etc. but doesn't the AC compressor work during defrost also? If it does wouldn't the compressor need to be able to work at less than 30 degrees ?

It does work with defrost, in theory below some temperature the dry air is not needed to prevent condensation.

Relative humidity drops quite a bit once the heat is on and at very cold outdoor temperatures. The compressor will just cycle on and off on the low pressure switch. If won't be very effective at very low temperatures, but it won't need to be.

If you don't want it to run in these other modes:
Some like myself have modified the HVAC control switch so the AC compressor will only run when the "AC" button is depressed. This mod disables it in all modes when the "AC" button is NOT depressed. Fairly easy to do if you are comfortable working on switches and have some small soldering tools. :D
This gives the driver total control over when the AC compressor will run or not.
