Yes, there is about a 15-20 degree difference between the hot fluid leaving the transmission going to the cooler versus the temperature of the fluid in the pan.
I have an inline sensor on a "Tee" block on the hot fluid line going to the coolers and a sensor in the side of the PML oil pan.
I wired them to a switch (DTDP) so I could switch from one sensor to the other on the fly using only one gauge (Glowshift).
And I routinely see the 15-20 degree temperature difference between the two sensors when at normal operating temperatures.
The pan is always cooler!

Another great idea. My remote Derale 13740 has the dual fan temp sensor switch which Derale says is calibrated for 180 degrees. My fluid pan temp sensor in the bung is a GlowShift. I can install a Tee with another GlowShift sensor and the switch arrangement you provided.

I need confidence that the transmission is not going to overheat now that I have abandoned the factory cooler in the radiator for the remote dual fan Derale.

What should the fluid in the pan be after running for a long period? I have not run for a long period so am curious what yours runs.

Also, do you know what temperature the built-in transmission temperature light in the dashboard comes on?

The highest I have seen the temperature in summer while towing in the oil pan is 180-200. Line temperature gets much hotter.
But keep in mind, I have the factory cooler, a 10 plate stacked Derale cooler and a deep sump aluminum finned PML oil pan.
I have never seen the transmission warning light on the dash come on. Good luck finding the exact temperature it is triggered at.
But I have experienced twice before adding the additional cooler and deep sump oil pan, the transmission got hot enough lock out some of the overdrive gears.
At the time I did not have a gauge installed; this is what prompted me to add a transmission temperature gauge & additional transmission fluid cooling.

I suspect the dual fan Derale cooler will provide much better cooling than the small OEM cooler since it is not that large.
In my case, the 10 plate Derale cooler in series with the factory cooler helped some, but not enough for my liking.
That is what prompted me to add the deep sump aluminum finned PML oil pan. It has fins on both the inside and outside to help dissipate heat.
The PML oil pan made a significant difference in temperate, I should have done it first!

As I was looking at the manifold you referenced earlier for the second temp sensor (Summit) I saw this from Glowshift as I was shopping for the second sensor.

1) is the transmission line a 5/16 or 3/8 inch?
2) do you see any reason that the Glowshift T-fitting will not work?

I believe the lines to/from the cooler are 3/8".
The Glowshift Tee fitting should work just fine.
I used an aluminum "Tee" block gauge manifold and two Swageloc stainless fittings as pictured here.

I have one just like this in the output line to the cooler, which is in series with an additional B&M cooler in the grille. But I didn't get it at glowshift.

I've seen 225F when climbing a slow, winding mountain grade in summer heat, jeep fully loaded but no trailer.

And did you tap the sensor hole or did you pay the $75 to have PML do it?

Actually, it came already drilled and taped for the temperature sensor and I did not pay anything extra. I was going to drill and tap it myself, but I did not have to.
