First time I was in Moab my Libby was bone stock, no lift, BFG All Terrain tires. We did Dome Plateau, Arches National Park with the cut across, Top of the World, Onion Creek across to the Fisher Valley, Polar Mesa and out on the La Sal Mountain Loop road and Gemini Bridges. All are fairly easy trails with awesome beauty, a tug may be in order at the entrance of the Arches cut across and it's pretty soft going out the other side, but other than that there should be no issues.
A day trip to Canyon lands National Park is also a great trip. Beautiful and you can see where the film Thelma and Louise was filmed. You could also do 7 mile rim and if you do, going across the rock is not that big of a deal. It messes with your head more than being difficult.
You will want to stay away from the higher rated trails with a stock Libby because of the low ground clearance. The slick rock is very sticky and you will be amazed what you can climb.
Make sure you make a stop at Milt's for a burger and some greasy fries!
