OK now things have changed if you want to stay with a shorter tire like stock size 8 inches is going to be too wide
Now look at this picture, 7 inch wheel with 4 inches of back spacing disregard the people  Puts the tire and wheel out to the edge more but not a wide wheel that you need a larger tire for

That's the thing, I have yet to find a 7" wheel I like. All the ones that says "bling" to me are 8".

Been researching tire sizes... a 255/65-16 tire will fit on an 8" wheel and it is nearly the same rolling diameter as stock. 20 mm would make it almost an inch wider. So would that amount cause rubbing issues? Would I still need to pound the pinch weld flat?

Hard to say for sure but more than likely yes you would.
Compare it to a 245-70, width wise etc. A 245-70 works great except it will rub sometimes at full turn. Add the extra width of the wheel, plus extra width of the tire and you'll be rubbing for sure. Plus its hard to know how much sag you already have in your springs so that will also affect how much rub you'll have.

If you can tell... These are 15x7 with 4" backspacing on them running 31x10.5x15.
My fender flew off driving down the highway...

But I plan to lift it before I install new wheels and tires.
