I prefer teh MT ATZ's, 10ply construction, they are bomb proof, let em down to 15 and you won't roll a bead, The 694 are good, my bro just got a set of LT's for his BT50.

I believe the 694LTs are actually bigger that the normal ones so check the size of the LT it may actually have a larger dia.

As far as legalities go, Plod is not going to even look twice at you with these tires, Its not like some of these clowns that put in 6in lifts, 2 inch body lifts and then run 37's hanging out the guards. Even you insurer will prolly not actually look in an ivestigation.. Its just that YOU are happy to do it do it, if YOU have any resevations, DONT. stay with the current 15mmm max. Don't be conserned about what anybody says.
