You are very correct and I even thought of going to Lowes and buying a cheap weed sprayer, mount a gauge, but then I would need a cap to mount a fitting in, etc.
So I said what the heck and just purchased the tools with the metal adaptor cap. Got a yard full of Mopars, so I can always use on them as well or one of my customers vehicles.
As to pressure, instructions say 15 psig and that is what I used. Worked perfect! At 15 psig it actually applied the brakes (I tried to turn the wheels just checking).
Fluid came out of bleeder at just the right rate for flushing/bleeding, slow and steady. Not violent like when using the someone pumping pedal and bleeding method.
A big plus for using this type of brake bleeding system, you don't have to depress the brake pedal and risk pressing the master cylinder plunger to the bottom of it's bore which can sometimes cause master cylinder seal damage and / or failure.
