wouldnt think an extra 1 or 1.5 inch of tire height makes a difference but it does! also if your an automatic.. look for some light (in weight) 265's and alum. wheels.. if you put on heavy mudders and steel wheels the next thing you'll want is 4.10 gears.
Rim wise you are in good shape, the Rubicon rims are alum. and going to give you pretty much the least weight possible, and the ideal back spacing you can get for running the 265's. I have OME coils over Rancho's (pretty much the same as a Franky), & 265-75-R16 Goodyear MTR's on Rubicons with out any issues. However I have the ARB bumper which gives me extra clearance at the front of the wheel well. So you will almost certainly have some trimming to do, but there are plenty of how to's that will show how to resolve the rub. You may still want to consider re-gearing to 4:10 down the road, but your current set up is the lightest possible ie best case scenerio if not regearing.
