So I was messing around behind my radio trying to install a new one when I went to remove the whole console piece because it was getting in the way. When I went to disconnect the wires behind my climate control (where you control where the air comes from, not the temp control) I heard a hiss then plugged it back in and abandoned the project. As I was going to work, I noticed the air was coming out ice cold, even with the heat on max and engine warm. What was that hissing and what did I break?

I see you've gotten no reply so I'll take a shot at it. I'm not an expert on these things but there are a lot of vacuum operated components back there. Actuator, blend door etc. You probably busted/disturbed a connection hence the hissing. Check this link out for a bit of a crude schematic:

I'd go back in and see if you can find the "disconnected" line.
