For anyone looking for a decent tire option for 17" rims, I'll offer my two cents for these:

These are the firestone destination A/T's size 235/75/17 (30.9" Dia / 9.3" Wide)

I have a OME H/D lift and an ARB front bumper that netted 2.25" in front and 2.5" in the rear. I had to take off the fender liner over the pinch weld, but did not have to bend the pinch weld over. See below:

On the drivers side, I used a heat gun to bend the fender liner away from the tire and used two, self tapping sheet metal screws to hold the liner in its new place. This eliminated any rubbing at full turn lock on the drivers side.

Also, I had to use a heat gun and trim part of the fender liner on the passenger side around the washer bottle. I was not able to eliminate the rubbing here as you can see, it hits. Any thoughts on what I could do, short of removing the liner entirely?

The rubbing isn't too bad, it isn't hurting anything, and only makes contact on full lock. So I think I will live with it for now.

Maybe if I were to do it again, I would go with 245/75/17 (30.6" Dia / 9.8" Wide) Originally, I thought the 0.3" would be no problem, but it may have made all the difference in terms of the rubbing at the washer bottle location.

Any other thoughts?

Looks good. I think you may be right that the 245/70R17's might fit a little better. Looks like 1/2" less backspacing would help too.
