Folks who have tried 265x75x16 on Moabs or other 16x8's had interference problems tire to fender - so they back down to 16x7 - folks using stock rims can normally go to 265x75x16. and everyone running 265x75x16's are close and most end up with some kind of trimming the rear fender. so you have an extra .75" you need to clear.
now you might gain 1/2 of that from the tire - however the 235,255,265 are section width - the wide part of the tire - that's not the problem - the problem is tread width - and almost no tire companies tell you that.
So expect at minimum extra trimming - maybe extra tall bump stops on the rear.
