If you were talking to the guy who works the service counter, he's a moron. I've found that most of my frustration with my dealership's service department is with the guy at the counter. The times I've talked directly to mechanics or the service manager, things have been different.
Your dealership is sort of accurate, they do not have the 245/75s in their computer for the Liberty. That means they can't punch in a simple conversion to set the speedo correctly. They have to manually set the RPMs. That's what they had to do with our and mine is dead on with the GPS now.
I would try bringing in the chart that PCTim mentioned. (I found the one for BFG tires after the fact.) Tell them you know people who have had it done. Let them know that both Sparks Jeep, in Concord, NC and Skyland Jeep, in Asheville, NC, have done this proceedure.
If that doesn't work, I'd contact the service manager directly. I personally hate to have to do that, but there have been two cases at my dealership where I had to either talk to the service manager or threaten to call Chrysler direct before they did something the monkey at the front desk said they couldn't do.
