Alright, the fault seems to be mine.

I gave the paint overnight to dry, but in the moist Anchorage weather, I don't think it cured sufficiently before I sealed it.
So, I pulled the assembly back out and baked it again for an hour (rotating everything 10 minutes). Then, I let them sit open all night. After a day of driving... no condensation!
If you are going to do this mod and live in a damper area... give it a good long time to let it cure out! Don't rush the lights back in because you have to drop kids off at school...
