Starting with a rev up to around 1000-1200 is the indication that you have a GDE tune on the computer. If you weren't aware of that, send an email to Keith with your VIN number and he can tell you what tune was programmed into your computer.
As for the hesitation, it doesn't really mean anything right now - you just had the top of the engine open, and it can take upwards of 5-10 minutes to truly purge all the air from the rail. I'd give it some time and see if that hesitation doesn't clear up.
