My current height is 21" I'm going to bump it up a little with a clevis lift. I've been searching but can't find a definitive topic on whether to stick with the standard offset or to move the wheel further out, I'm going to run a 31 10.5 r15 and have to order rims.

7 inch wide / 4 inches of backspacing
if you think you just have to have 8 inch wide go with 5 inches of backspacing
Some 15 inch will rub the caliper so check first
With only two inches of lift yo'll need more lift for sure, clevis will only give you 3/4 on an inch

Depends on width
I never use that offset BS crap, just backspacing
All aftermarket steel wheels that will fit over the calipers that I have seen list the backspacing
Some of the " fancy " cast etc wheels list offset but they will not work anyways in a 15 inch flavor

I have 2.75" in the front and 2.5" in the rear.

Achieved with OME 1.5" Lift kit.
Half inch Clovis spacer and 1/4 strut top plate spacer with 2 additional rear upper iso's in the rear for a total of 3 per side.

I have 31X10.5R15 duratracs on 15x7 with 4" of backspacing.
You'll have to delete the pinch weld and wheel well liner in the front a little bit.

Some photos for reference.

Do not " delete " the pinch weld just fold it over
Clevis not clovis
just to keep things straight

Looks the goods. Love the look of these things with decent tyres.
How much plastic did you chop from ware? I trimmed a little bit but worried it won't be enough under compression, also, have you done anything with your front bump stops?

Shouldn't have to trim any or very little plastic with right wheel backspacing/width and right amount of lift
Front bump stops use Teraflex, available through www.jeepinbyal.com/

I finally nailed down the lift, going with IronMan springs and shocks. Going with some new wheels and tires as well. I think I'll be able to fit 265/75R16 tires and if I understand everything I am reading, buying wheels with 0 offset will give me an inch of space inside the wheel well and push my tire about two inches further out. Any thoughts from the more experienced guys if this will be a good combination?

If you don't have 4" of lift and you run 265/75R16 / 31.7" tall.
You'll tear your fender flares off under articulation and you'll also need to remove the wheel well liners entirely.

Not to mention the $2,000 dollars to regear to 4.10's.

You also have to trim quite a bit of wheel well liner with my tire size.

Even with appropriate backspacing. Upon full lock in drive or reverse 31X10.5's will grind and pull your liner out even driving on level ground.

So perhaps 245/75R16s would be the better option?

When I lifted I ran my stock wheels and had a 245/70R17 Kumho KL78 (AT)
They rubbed at the pinch weld and a teency bit in the front of the wheel well.
245/75R16's are probably the most common choice for lifted liberties. Plenty of tire options as well.

The bigger question, specific to this thread, is the offset. I am purchasing wheels and have many options, it seemed that a 0 offset would be an improvement and get that slightly wider tire away from the workings of the front end. Your comment about the fenders gives me pause though...

Once again 7 inch wide wheel and 4 inches of backspacing works great lifted
or if you think you have to run 8 inch wide 5 inches of backspacing ( example Rubicon Moabs from a TJ not JK)
No trimming of inner fenders on mine, pinch weld pounded over
265-75-16s, 4.10s, Moab wheels

I got hold of a set of wheels with 4" 3/8 4"&3/8th (not to sure how to right it in imperial it's 110mm) backspace. They where free. miles of room between the sway bar but rubbed like a mother on the bottom of the bumper, wouldn't be an issue with a bar. They are inside the flares......just!!!

The Jeep is going in Monday to have the Ironman springs and struts installed. Still dealing with what tires and rims to go with. After much research and many mixed views I threw the towel in and was going to let the local 4x4 guy just do it. He assured me that 17x9 rims with 265/65 tires was the way to go and would require only minimal trimming. Now things just got more complicated when he found out he couldn't get the rims he suggested.

Ugh I'll be glad when this over. I just wanted an inch or two of clearance....

I believe I finally have my head wrapped around the difference between offset and back spacing when it comes to wheels. I'll ask everyone one more time for recommendations as the time is fast approaching when I have to make a decision that will affect the Jeep for years to come.

WAY TOO WIDE OF A WHEEL no tire you run on a KJ needs 9 inch wheel width just asking for issues
16 inch wheel
7 INCH WIDE WHEEL IS ALL YOU NEED WITH 4 INCHES OF BACKSPACING
PLUS with atht wide you'll need to CUT, HAMMER, BEND, PRY ETC
LISTEN TO THOSE OF US WHO HAVE BEEN DOING THIS FOR YEARS NOW INSTEAD OF SOMEONE WHO JUST WANTS TO MAKE A QUICK BUCK
