So far no problems with the 245/75-16s. They killed some power and mileage, but it's doable. On average I see anywhere from 11-14mpg. Going upstate camping last summer I averaged 16.5mpg (I push, I normally roll 75-90mph on the interstate and throughways. On the island it's 70-80mph). My next set of tires will be 265/75-16 (probably Duratracs). They do great for me on the beaches and all the snow we have.
Looking at the sizes, I have a feeling it's just not enough sidewall with the larger rims. I mean if you're comfortable mounting it, by all means go for it. My duratracs never failed me, I normally air down to 15-20 psi, sometimes about 23 depending on how lazy I am. Never been stuck on the beach, only got stuck once(first time ever with these tires) this winter because I got hung up on the diffs. I was crawling(like 1-2mph) through a snow bank and got hung up on the front cradle and rear diff. Got pulled off easily, then went back through at about 5-10mph and was fine.
As long as you stay smaller than a 31" tire you'll be fine.
Never even noticed that you're on the island. Where on LI? I'm always down to meet up. I have a small group with a few KKs in it, that meet up pretty often and love to hit the beaches. This is me and one of the members KKs. She has a 3.5" tommudd lift and 265/75-16 Kumhos
