When I accelerate over ~3000 rpms in my 07 when the motor is cold (cold meaning its sat at least an hour, not physically overnight-cold), I get some sort of odd noise behind the glovebox/passengers side dashboard area. It sounds like a can of compressed air used to dust shelves and whatnot -- the "whooshing" noise the can makes after using it. Like cold freon or something whooshing/gurgling.

We had an 07 loaner that did the same thing. When the engine is fully up to temp, it goes away.

What the heck is this noise? I'm thinking something HVAC-related.

When I park the jeep, the blower/vent setting is completely OFF every time.

It can be cold or hot out and this noise always occurs.

Sounds like the intake sucking air in. Probably normal.

Some early libbys had a box on top of the throttle body that could of cut down on the air. They either took it off sometime in 03, or took it off on the 04's.

They could of also changed the throttle body on the 07's since they put that drive-by-wire crap on there.

Does the noise come from the vicinity of the heater core?

I would say that if it does it when a/c compressor has been running(defrost or fresh air mode)then it's the sound of the pressures equalizing. The pressures while running will generaly be 30 to 40 low or suction side, and 250 to 350 high or discharge side. When the compressor shuts down, both sides will equalize at about 100 psi. This could be the noise your hearing.

If its in the same vicinity as my 80 Trans Am, behind the pass. side dash area, then yes.

I should note that the noise occurs with OR without A/C or heat on. Typically I don't turn anything on until the vehicle gets mildly warmed up. Thus, the primary time I hear the noise is with a colder motor before turning accessories on. It's only after a certain RPM range though, and only lasts a few seconds. Like some pressure is moving through something or whatnot. But, it has to be harder (approx. 1/2 throttle or more) acceleration to do it.
