If I was running a 245/70/16, and got a flat, would I be alright using a 235/70/16 as a spare?

235-70 is 29.1 inches tall
245-70 is 29.6 inches tall
so half inch taller , if you have lockers then yes it would be a problem, if you are open you could get by for a few miles

Wherever you buy your tires at see if they will swap you for yours, have done that before

Wouldn't it be the same as say, having a car that runs a mini spare?

If you have the select trac t-case you can not use full time 4wd with a smaller/larger spare. If you have a auto locker(like a Detroit or any lunchbox locker) or a LSD you can not use a smaller/larger spare but only on that axle with the auto locker or LSD only,it's okay on the diff that is still open.

Vehicles with those donuts do not have a full time 4wd option,LSD's,or lockers offered. All vehicles with the before mentioned items(OEM) will come with a full sized spare or at least a same height spare. If you put these items on you need to get a same size spare or damage will result.

Basically don't be cheap and buy 5 wheels and tires of the same size, not 4 to save some money, more so if you drive a Jeep  .

Sorry to beat a dead hoarse, but lets say I make sure the small tire is in the front so not to effect my rear LSD, and I keep in in rear wheel drive, I'm only limping home or to a garage, not driving it for months. I know over time it will be a very very bad idea, on the transfer case, the diff, the tires, etc, but for that short period, am I not safe? Once again, sorry for beating a dead horse....

On a non-powered wheel with no more height difference than you are talking, yes you will be o.k. Might it handle a bit differently? Possibly. But it is not going to be bad unless you act like you are qualifying against Dale Jr.
