didn't wanna disrupt the post in the ohio section but i noticed a mention of some pig cookin

what you fellas know about cookin such things :wink:

from the amount of people i met from up around IL / IN / OH that drove from up there down to NC to my hometown's yearly bbq festival I might know where the good bbq's at :lol:

i'm just messin, you guys typically do vinegar based or what?
My gf's fam usually does this concoction of like 3 different store based sauces for bbq chicken, which, well.. i eat it .. but I still don't think they've ever had good bbq

edit: First one to say "I got better bbq than you" has to offer to cook it so i can try it and see. If i like it better i'll fork for a keg or something. Simple as that

man that has me thinkin, I need to figure how to get up there with a few gallons of peach brandy.. that XXX kind ;)

I don't know about all thaaaat... I've had bbq a couple times around mephis

It was good!

I've had better though

ya know, Hog Day in hillsborough NC would be a good place for a LOST meet and greet :P whole week and weekend of live bands, car shows, home cooked food and the whole point of the whole thing..

a BBQ contest .. :shock: mmmmmm

people from all over the country come to it yearly

I haven't done it yet but I've enjoyed pig cooked on a skewer over a fire all day or in the ground. Both were very good but I enjoyed the one over the fire more. Sadly I live in an apartment right now so I can't try to do it myself. :cry: Oh and you Yanks can't touch Texas BBQ. :wink:

I grew up eating BBQ from the family farm in western Kentucky. Dry, pulled pork with nothin' but maybe a little extra hot sauce on top. Moved here and found VA BBQ to be sweet and COVERED in sauce (blech!). NC BBQ is vinegary and covered in sauce, which is the slightest bit better than VA BBQ (blech!). Unfortunately, most of the yahoos around here insist on chopping the dang BBQ up instead of pulling it. Drives me crazy to order BBQ and get a plate full of chopped soup. Nasty!

But we have a restaurant here called Jakes Smokehouse, which is the closest thing I've had to what I grew up referring to as "West Kentucky BBQ." Dry, spiced, and smoky. Yum!

Dry (spiced during the smoking process) pulled pork is my favorite. I like pulled beef too, but everyone only seems to be able to figure out brisket.

I'd definitely be up for a BBQ cookoff in Hillsborough!! Especially if people are coming in from Memphis and Texas and all the other middle-country beef states. No 2009 date set yet according to http://www.hogdays.com/. I hope they're going to do it this year.

I spent most of my Army career at Ft. Hood and you're right. Although I've also had some amazing "other white meat" in Maui too.

a pig roasted on a spit,pulled with a bit of sauce on the side is the bomb! too much sauce just mixed in doesn't do the pork justice. I had some real good pulled pork in rocky Mount,NC a few years ago but i couldn't name the place if I wanted to now.

might have been a herseys in rockey mount hard to say

downtown hillsborough used to be fairly old-school small town

it's since been remodeled and overran with what most call yuppie existance resturants and cafes

they built a parking deck behind hte fire house to provide parking for the new grocery store downtown that's 100% orrrrrgaaaaniiiccc......

and they charge like 2 bucks an hour, and they're moving the public library over there too, so parking for the public library will be like 2 bucks an hour.... Friggin insane.

and to think.. years and years ago, when they were deciding to where to put the racetrack which is now talladega they were going to put it in hillsborough where the orig orange county motor speedway (dirt) was at, and the town 'smart' people decided against it, we still ended up with the fastests 3/8ths in the US, years later they let walmart in and it all went to hell hehe

Ohio really doesn't have it's own BBQ style like carolina, memphis, KC, texas, et all. Closer to the cities I find that pre-basted in a sweeter sauce with just a bit of tang is the norm, while the good places serve it as it was meant to be: Dry rub, choice of sauce on the side you add for dipping, etc...

Depending on mood, I'll use a clear vinegar based ( great with slaw ) but I usually use a hotter tomato based sauce.
