My employer is based out of Southern Florida and Pythons are a big problem.
Does anyone know how to cook python so it is palatable?
I would love to send the recipe to my boss.

cut it against the grain into strips or fillet sized pieces, get 2 or 3 packets of seasoning like you use with beef stroganoff

put all your pieces in a large cooking pot, on medium / medium high (about 6 on my camping stove, about the same on my range in the house)

cover with 3parts milk to 1 parts water, stir in the seasoning packets, add about 4 tablespoons of tobasco cut 50/50 with with your favorite vinegar bbq sauce with a few pinches of red ground pepper, stir it up and let it cook like any other white meat

i usually left the lid about 5/8ths of the way on the pot

i usually cooked it until i was able to sink a regular steak knife through it easily

Wow Jarhead.
I was gonna suggest slicing thin1/2",marinate in milk,sprinkle with some Slap ya Mama (hot is WAY better than the regular),coat with Zatarains southern crispy fish fry and deep fry,but,your recipe looks so good,I've got a 5 foot ball python that's about to become Jarhead Stew. :shock:

I've only eaten copperheads,so not sure as to the texture of the python meat.
oh yea,one pygmy ratler but that was straight over the campfire on a stick.

depends on the age and diet of the python, can be a little rubbery, i usually pound the fillets up real good with a fork before cooking, like you would cheep steak :P

but usually, cooked slow enough they'll tender on up

and yes, i've got several cans of slap ya momma, i use it on lots of stuff, it's a seasoning staple :P

I would think you can use an old Cajun recipe that I have used with coots. Coots are a little tough and gamy.

Soak the meat overnight in buttermilk.
Dip in egg and dust with your favorite BBQ rub.
Dip in egg again and dust with flour.
Fry in butter and extra virgin olive oil until brown in a cast iron skillet.
Cover in chicken stock.
Simmer for 1 1/2 hours.

Meanwhile cook a pot of rice as an accompaniment.

When done, throw away the meat and eat the skillet with a side of rice. Yum-Oh!

Reminds me of my Opossum recipe

clean and skin, dip into boiling water for about 2 minutes

Place on particle board pallet and rub down with bbq sauce

place in oven on 450-500 (Whatever the last number is..)

Leave in for 4 to 5 hours

Remove from oven, discard Opossum, eat particle board
