Because we don't, no one has ever proved a thing by putting on a larger filter.
A larger oil filter expands your oil capacity.
A larger oil filter should have the ability to filter more oil.
Larger oil filter will restrict the oil flow less, I MEASURED (on a calibrated oil filter test stand to SAE specs) 3 PSI less restriction comparing a Fram TG8 compared to the smaller TG8316, each at the end of their 12K mile life's. may not mean anything at higher engine speeds, but 3 PSI more oil pressure is a good thing to have at idle. also filter media, the cellulose or synthetic "paper" that traps the particles actually filters better at lower face-speeds, which is to say for a given media and oil flow rate, the less the face speed (more media area) the higher the filter efficiency, this is significant too it can be a few % at the lower particle sizes, 5-10 micron.
only draw back is that the maker is only responsible for engine damage on for the model filter they list in the catalog for a car, if any other filter is used, they are 100% irresponsible for any damage, even if the filter is made wrong.
