Your 245/75 are about 31", so you should have no problem with any of the rims (you have at least a 2" lift, right?). I'd recommend a 0 offset wheel, to move it out and improve your track width.
I have 33 x 10 Trxus MT on steel 16x7 rims, with 0 offset (4" bs), which widens my track by 4" over stock. With my 2 1/2" lift, I got a little rubbing at the back, before I put in my air bags ('02 - pre lowered). I also trimmed about 1/4" off the plastic at the back doors.
I also have a pair of 33 x 12 boggers, which I put on the back at the trailhead, on 16 x 8 rims, with 5" backspacing (+ 1/2" offset), which of couse widen the track by 1" from the 33 10s (or 5" from stock). They're also fine on the back (unless my airbags fail!).

The one of the boggers on a ramp, are flexed up about 7".
(i.e. on an 11" ramp, and a 30" tire on the other side, so (11 + (33 - 30) / 2) = 7")
